Il aborde l'Inde urbaine dans son quotidien ordinaire, en s'intéressant à ce qui constitue la majorité des Indiens : le monde des gens de condition modeste et de la petite bourgeoisie. Dans les cuisines de Bombay nous plonge dans trois entreprises de restauration collective, dirigées par et employant en majorité des femmes. Très différentes sur le plan social, culturel et économique, ces entreprises défendent chacune une cuisine bien spécifique. Alexandra Quien analyse ainsi le statut symbolique et social de la nourriture et ses transformations dans l'Inde d'aujourd'hui et traite des rapports complexes qu'entretiennent les Indiens avec la diététique, la physiologie, l'image du corps. Elle vérifie ensuite si la nourriture impose toujours une ségrégation explicite entre individus de castes différentes fondée sur le principe idéologique du pur et de l'impur. Elle pose aussi la question de la place des femmes dans le monde du travail en Inde, et plus précisément celle du difficile passage de la sphère domestique à la sphère professionnelle. Dans les cuisines de Bombay nous montre des processus en cours et révèle les résistances, ou les résurgences sous des formes nouvelles, des normes précédemment dominantes. L'auteur met ainsi en avant le jeu réglé des distinctions et des stigmatisations sociales autour de la nourriture dans une Inde peu connue du public occidental. Son ouvrage est une anthropologie vivante des moeurs sociales et religieuses dans un pays d' 1,2 milliard d'habitants devenu le symbole des économies émergentes.
